Dawn and John Boullion, owners of Beignet Today, like to bake — so much so that they’ve turned their home kitchen into a business fit for a king… a King Cake that is. The couple have turned their Cajun baking skills into a weekend business that in just one year has become a part-time, full-time job, especially during the season of Mardi Gras. They are open just four hours a day on Saturdays and Sundays and cake-hungry customers flock to their house from 10 a.m. to 2 p.m. to scoop up the delicious homemade baked goods. The future, like their cakes, is rising.
