Soft & Chewy Oatmeal Raisin Cookies


1/3 cup unsweetened applesauce
1/4 cup maple syrup
1 egg
1 teaspoon vanilla extract
1 cup whole wheat flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/8 teaspoon salt
1 cup old fashioned oats
1 cup raisin
1/2 cup finely chopped walnuts


Preheat oven to 350 degrees, and spray a baking sheet with nonstick cooking spray or line sheet with parchment paper.

In a large mixing bowl, combine applesauce, syrup, egg, and vanilla extract. Whisk ingredients together until fully combined. In a medium bowl mix together the flour, cinnamon, baking soda, salt, and oats. Once the dry ingredients are mixed together combine them with wet ingredients. Fold in raisins and chopped walnuts, mix until combined.

For each cookie, drop 2 tablespoons of batter onto the baking sheet and gently press down the top of each cookie to slightly flatten them. Bake cookies for 12 - 15 minutes or until golden browned on the sides. Remove from oven, transfer to a cooling rack and allow to cool for 5 minutes. Serve with a tall glass of cold milk and enjoy!
