Roasted Green Beans and Walnuts


Vegetable oil spray
12 ounces fresh green beans, trimmed
2 teaspoons extra-virgin olive oil
2 tablespoons finely chopped walnuts
2 tablespoons finely snipped fresh parsley
¼ teaspoon salt
1/8 teaspoon cracked black pepper
1 tablespoon freshly grated or shaved Parmesan


Preheat the oven 425 degrees.

Lightly spray a large baking sheet with vegetable oil spray. Arrange the beans on the baking sheet in a single layer and drizzle with oil. Toss the beans in the oil a bit to coat. Sprinkle with the walnuts.

Bake for 5 minutes. Stir. Bake for 5 minutes. Remove from heat. To serve, sprinkle with the parsley, salt and pepper and Parmesan.
