EWWK: Gluten Free Peanut Butter Bites




Ingredients

1 cup oats (use gluten-free oats such as Bob's Red Mill)
1/4 cup unsweetened coconut flakes
1 cup creamy peanut butter
2 tablespoons chia seeds
1 teaspoon vanilla extract
1/4 cup pure maple syrup
3 tablespoons dried raisins
1/4 cup sunflower seeds
Wax or parchment paper

Directions

Add the oats and coconut to the bowl of a food processor (or blender) and process until coarsely chopped.

In a medium-sized bowl, combine all of the ingredients and mix well. Scoop mixture out into 1 tablespoon balls and place on a wax paper lined sheet pan. Freeze for about 30 minutes, then place into a container and store in the refrigerator or freezer.
