EWWK: Watermelon and Cucumber Salad


2 tablespoon lime juice
1 tablespoon finely diced red onion
1 tablespoon olive oil
Grinds of fresh pepper
¼ teaspoon salt
2 tablespoon mint, chopped
7 cups cubed watermelon
1½ cup English cucumber, sliced (about ½ a cucumber)


Combine lime juice, onion, oil, salt and pepper and mint in a small bowl to create the dressing. Place watermelon and cucumber in a large chilled metal bowl and gently mix. Drizzle with the dressing and toss with cracked pepper.
