EWWK: Simple Miso Dressing


Miso Dressing
1 rounded tablespoon white or yellow miso.
3 tablespoon rice vinegar or lemon juice
½ teaspoon grated fresh ginger.
1 small garlic clove; finely minced
2 tablespoons canola oil or grapeseed oil
1 tablespoon chopped parsley

Simple Salad
6 cups mixed greens
1 shredded carrots
½ chopped English cucumber


To make the salad dressing mix the ingredients in a small bowl with a whisk, and set aside.

Toss the mixed greens with the dressing and then top with carrots and cucumber to serve.
