4 cups of brewed green tea (see note)
1-inch ginger peeled and smashed
2 slices of lemon
2 cloves garlic (peeled and sliced)
1 ½ teaspoon Celtic sea salt
½ teaspoon pepper
1 pound or 4 salmon fillets
DirectionsIn a large skillet with sides, simmer green tea, ginger, lemon slices and garlic for 10 minutes.
Sprinkle the salt and pepper over the fish place the steaks gently into the poaching liquid. Adjust heat to a gentle simmer, cover and cook 5-8 minutes until fish is done (flakes easily and is still moist).

Note: To brew green tea pour 4 cups of hot (not quite boiling) water over 4 tea bags and let steep for 2-3 minutes. Remove tea bags and use tea in the recipe as directed.
