1 tablespoon mango chutney
2 teaspoons mustard
2 whole-wheat tortilla wraps
½ cup spinach leaves, divided
4 ounces shaved high quality ham, divided
½ cup sliced cantaloupe (mango, pineapple or apple)
2 slices reduced fat cheddar or Swiss cheese
DirectionsIn a small bowl mix the mango chutney and the mustard, then spread half this mixture over each tortilla. Place a layer of spinach over the tortilla (leave a little space at the bottom so you can fold the tortilla up on itself). Next layer the shaved ham over each tortilla, followed by the fruit and cheese. Then fold the tortilla in thirds, and lastly fold the bottom up to hold the contents in, this will make it easier to eat in the car. Enjoy!
