EWWK: Low Sugar Peanut Butter Cookies


1/2 cup + 3 tablespoons Truvia® Baking Blend
1 cup peanut butter
1 egg


Preheat the oven to 350 degrees and place 3 tablespoons of Truvia® on a small plate.

Combine the remaining ingredients into a medium mixing bowl and mix with an electric mixer or spoon until thoroughly combined. Scoop cookie dough into a 1-inch ball and roll in the remaining Truvia® before placing on a parchment lined cookie sheet. Then press the cookies with the tines of a fork in a crosshatch pattern. Bake for 9 to11 minutes. Allow the cookies to cool for about 10 minutes before removing them from the baking sheet.
