½ teaspoon extra virgin olive oil
½ red onion, finely chopped
½ cup feta cheese
1 teaspoon oregano
2 garlic cloves, minced (divided use)
1 slice of bread torn into pieces (or breadcrumbs)
¼ cup milk
1 pound lean meat (92% lean was used)
½ large cucumber, peeled, seeded and finely chopped
½ cup Greek yogurt
2 tablespoon fresh mint leaves; chopped
½ teaspoon Greek seasoning
1 large tomato, thinly sliced
4 Pita halves (whole wheat preferred)
DirectionsPlace and non-stick pan over medium heat and add oil, once hot add the onion, cooking until the onion is soft. Turn the heat off add cheese to the pan and stir to combine well. In a medium bowl combine the bread, milk, onion mixture, oregano, and garlic. Add the meat and mix gently. Divide the meat into 4 (or 5) portions and flatten into equal sized patties. Refrigerate until needed.
In a medium bowl mix the cucumber, Greek yogurt, mint and garlic. Refrigerate sauce until ready to serve.
Prepare the grill and lightly oil the grill grates. Sprinkle Greek seasoning over the burgers on both sides just before you grill them. Grill on medium heat for 4-6 minutes per side or until done
