EWWK: Good Granola



Ingredients

3 cups old fashioned rolled oats
½ cup almonds
½ cup sunflower seeds
2 tablespoon flax meal (flax seed that has been ground)
¼ cup maple syrup
1 tablespoon organic canola oil or oil of choice
1/4 cup apple juice
1 teaspoon vanilla
1/2 cup raisins
1/2 cup dried cherries

Directions

Preheat oven to 300 degrees.

Line a baking sheet with parchment paper. Combine oats, almonds, sunflower seeds and spread onto the baking sheet. Bake mixture until oats are lightly toasted; about five minutes.

Meanwhile in a measuring cup combine flax meal, maple syrup, oil, juice and vanilla. Pour over oat mixture and bake for 15-20 minutes. Stir mixture every 7 minutes. Allow to cool, stir in dried fruit and store in an air tight container up to two weeks. Can also be stored up to 3 months in the freezer.
