EWWK: Farmers Market Greens


1 tablespoon extra-virgin olive oil
1 garlic clove, minced
1 tablespoon lemon juice
1 tablespoon water
Pinch of ground black pepper
1 medium bunch of greens (about 6 ounces), cleaned and trimmed


Heat a large saucepan or skillet over medium heat. Add the olive oil, garlic, lemon juice, water, and black pepper and sautés for 1 minute.

Add the greens and sauté, stirring often until the leaves are wilted, 2 to 4 minutes.

Variation: Add 4 ounces of cubed firm tofu with the greens.

Yield: 2 serving (serving size: 2/3 cup)
