EWWK: Dijon Delicious Asparagus


1 1/2 tablespoons extra-virgin olive oil
Juice of half a lemon
1 tablespoon Dijon mustard
1 bunch of asparagus (or broccoli)
4 cups of power greens


Preheat oven to 425 degrees

Trim asparagus or chop broccoli into large bite-sized pieces. Combine the oil, juice and Dijon in a small bowl. Toss the vegetables with half of the mustard mixture. Then transfer the veggies, in a single layer to a foil lined pan that has been sprayed with cooking spray. Cook the asparagus for 8-10 minutes. Once the veggies are done either brush them with the remaining Dijon sauce or place them on a bed of greens and drizzle with remaining Dijon sauce.

Yield: 4 servings (serving size: 1/2 cup vegetables)
