EWWK: Crustless Corn Pie


Classic recipe from Tea-Time at the Masters cookbook. Eating Well With Kim changes in the parenthesis.

2/3 cup milk
2 eggs
1 teaspoon sugar (omit)
1 tablespoon all-purpose flour
Salt to taste
1 (20-ounce) roll frozen cream-style Silver Queen corn, thawed
2 tablespoons trans-fat free margarine, melted


Preheat the oven to 350 degrees. Combine the milk, eggs, sugar and flour in a bowl, Season with salt. Stir to mix well. Stir in the corn and melted margarine. Pour into a greased 9 x 9 inch baking dish. Bake for 45 to 50 minutes or until golden brown.
