3 cucumbers, diced small (If using English cucumbers use about 1 1/2)
4 Roma tomatoes, diced (1/4 inch cubes)
4 green onions, sliced thin
1 can garbanzo beans, drained and rinsed
2 tablespoons parsley, chopped
1 tablespoon extra-virgin olive oil
Juice of 1 large lemon (~ 3 tablespoons)
1 teaspoon salt
Pepper to taste
DirectionsAdd cucumbers through parsley to a bowl. In a separate bowl, combine olive oil, lemon juice, and salt and pepper.
Pour mixture over salad ingredients and mix. Best when prepared a day ahead of time.
