EWWK: Barley Beet Bowl


4 cups mixed greens
2 cups cooked barely*
1 English cucumber; sliced
1 (8-ounce) package steamed beets, sliced
12 ounces leftover grilled chicken (about 2 cups chopped); or rotisserie
1 cup sliced carrots
1 (10.5-ounce) can mandarin oranges (packed in juice; juice reserved)
4 tablespoons pumpkin seeds

Honey Orange Dressing

2 tablespoons apple cider vinegar
¼ cup reserved mandarin orange juice
1 clove garlic, minced
2 teaspoons honey
¼ teaspoon salt
1/8 teaspoon pepper
3 tablespoons extra-virgin olive oil


To make each salad place one cup of greens on one side of a bowl and add ½ cup barely to the other side. Layer about ½ cucumber and beets, chicken, ¼ cup carrots and oranges over the top. Sprinkle with one tablespoon seeds.

To make the dressing combine the vinegar, reserved juice, garlic, honey, salt and pepper. Whisk in the oil. Drizzle equally over four bowls.
