1 cup steel-cut oats
¼ cup milled flaxseed (sometimes sold as flax meal or ground flaxseed)
1 teaspoon baking powder
¼ cups maple syrup
2 2/3 cups 2% milk
1 large banana, mashed
2 eggs, beaten
¾ teaspoon vanilla extract
½ cups sliced almonds
DirectionsPreheat oven to 350 degrees. Spray an 8 X 8-inch pan with vegetable oil cooking spray and set aside.
In a large bowl whisk together the flaxseed, baking powder and steel-cut oats. In a medium bowl combine the syrup, milk, banana and egg; stir to combine. Add the milk mixture to the oats and stir until thoroughly combined. Pour mixture into the prepared dish and bake for 50 minutes. After 50 minutes, top the oats with an even layer of almonds and return to the oven for 10 additional minutes.
