EWWK: BBQ Pita Pizza


½ cup chopped sweet onion
1 teaspoon extra-virgin olive oil
2 teaspoons apple cider vinegar
6 tablespoons low sugar barbeque sauce, divided
4 whole-wheat pita rounds
1 1/3 cup baby spinach, chopped
2 cups cooked chicken
1 cup part-skim mozzarella cheese
2 scallions, chopped (optional garnish)


Preheat the oven to 400 degrees.

Put the onion in a medium microwave-safe bowl and drizzle with oil, stir, cover and microwave for 5 minutes (stir halfway through).

Stir the vinegar into the barbeque sauce. Coat each pita round with one tablespoon of the sauce mixture (reserving the rest). Layer about 1/3 cup spinach over each pita.

Once the onions are done mix them with the chicken and add in the remaining barbecue sauces, stir to combine. Top the spinach with the chicken and onion mixture (about ½ cup) and cheese (1/4 cup). Place on a baking sheet and bake for 7-10 minutes until the cheese is melted.
