Classic Brownie Surprise


Vegetable oil cooking spray
2 tablespoons flaxmeal (ground flax seed)
1/2 cup water
1 family size box brownie mix
1 ½ cup mashed sweet potatoes (see note)
2 tablespoons canola oil
2 eggs


Preheat oven to 350 degrees.

Spray a 9 X 13-inch glass dish with vegetable oil cooking spray and set aside. Combine the water and flaxseed in a small bowl and allow the mixture to congeal. Next combine the brownie mix and remaining ingredients in a medium bowl. Lastly add in the flax mixture and pour the mix into the prepared pan. Bake for 28 minutes.

Kim’s Note: The quickest way to cook sweet potatoes is in the microwave. For this recipe, you may need 1 large or 2 medium sweet potatoes scrubbed clean, with the peel.

1. Pierce the sweet potato skin 5-6 times with a sharp knife.

2. Place on a microwaveable plate and microwave for 5-8 minutes, rotating halfway through. The sweet potato is done when the thin skin puffs to a crisp finish, the inside will be tender and moist. Mash and use as desired
