Blackberry and Peach Parfait


For the Chia Pudding
1 cup fat-free milk
3 tablespoons chia seeds
¼ teaspoons vanilla

For the Parfait
1 cup (5.3oz) Siggi's 2% coconut yogurt
1/2 peach, diced
1/2 cup blackberries, chopped
Coconut chips (optional garnish)


For the chia seed pudding, combine all the ingredients in a bowl or jar and whisk well. Place in the refrigerator and let sit for about 1-2 hours. It will turn into a lovely pudding consistency.

To assemble the parfait, layer the chia seed pudding, followed by the Siggi's yogurt and top with the fresh fruit and coconut chips. Enjoy!
