Asian Slaw


2 teaspoons maple syrup (brown sugar for cost)
1 tablespoons peanut butter (or other nut butter)
1 (3 piece ginger, grated
2 tablespoons lime juice
2 tablespoons rice wine vinegar
1 tablespoons light soy sauce
2 teaspoons toasted sesame seed oil
4 cups (10 ounces) thinly sliced green cabbage
1 red bell pepper, sliced into thin strips
1/8 teaspoon red pepper flakes
½ cup chopped fresh cilantro


In a medium bowl whisk together syrup, peanut butter, ginger, lime juice, rice wine vinegar, soy sauce, and oil. In a large bowl, combine the cabbage, bell pepper, and red pepper flakes. Drizzle the dressing over cabbage and toss to combine. Fold in the cilantro and enjoy or refrigerate until ready to use.
