Eating Well With Kim: Walnut-Pesto Turkey Burger
This recipe had the entire studio smelling delicious. It is not just delicious though, it is brilliant --- combining the walnuts into the burger added nutrients, fiber and extended the meat so that instead of four burgers from one pound of meat it made six.
- 2 cups fresh basil leaves
- 1/4 cup Italian flat leaf parsley
- 2 cloves of garlic
- 2 cups walnut halves and pieces
- 1/2 cup parmesan cheese (use vegan parmesan for dairy free alternative)
- 1 pound 99% lean ground turkey
- 1 large egg
Combine basil, parsley, garlic, walnuts and cheese in a food processor. Pulse until course and just combined. Hand mix with ground turkey and eggs.
Divide mixture into burgers. Heat olive oil in large nonstick skillet over medium heat. Cook burgers 6 minutes per side or until no longer pink in center.
Serve with desired fixings like lettuce, tomato, buns, etc.
