You can smell the barbecue in the air just about everywhere you go this holiday weekend. It's a tradition, and it's big business this time of year.

At the Barbecue Barn in North Augusta, orders came in early and came in fast Friday morning. Down the road at Bobby's: a full spread on the buffet and a full kitchen. Every employee is on hand. What's the secret to the great barbecue here? "We have some recipes that my mother started years ago, we just make people feel welcome, and that's the secret to good barbecue mainly" says Bobby Griffin.

Across town, lines in the driveway and lines out the door for some of Sconyers barbecue.
"It's not a job anymore, it's fun, we enjoy what we do, we really do", says Larry Sconyers. The pits are full of ribs, chicken, and pork barbecue.

This is the busy season for these barbecue restaurants. They work around the clock to prepare hundreds of more meals than a normal day. After this holiday weekend, most of the locally owned barbecue places will take a short summer break.
