Eating Well With Kim: Freeze or Not to Freeze

Budgeting and grocery shopping … can you think of two more mundane topics?

Now combine them and try to make that interesting. Sometimes I get stumped by this topic and how to make it unique and fun.

However, getting a good deal does continue to be exciting and when I see one at the grocery store, my first thought is: “Can I freeze that?”

Here are three items that frequently go on sale and freeze well:

Nuts: First off, I love keeping nuts on hand for snacking, baking or tossing in salads. But they do quickly go rancid due to their healthy mono and polyunsaturated fats. Store them in a plastic airtight container in the freezer and use them as needed. Shelled nuts will last for up to eight months in the freezer.

Cheese: When cheese goes on sale, stock up. Hard cheeses can be frozen in their original packaging, but wrap tightly in plastic wrap or heavy-duty aluminum foil as well. Soft cheese and cheesy spreads will only last frozen one month, so it’s worth it to freeze the harder cheeses, which will last up to six months. Just remember to thaw the cheese in the refrigerator overnight before you plan to use or serve them.

Meat: I have talked about freezing chicken when it goes on sale many times before but my new favorite way to get a deal is to buy pork loin when it is on sale. Instead of freezing it whole, have the butcher cut it into pork chops for you. Freeze some of them in marinade so they are ready to cook when you want. Just pull them out of the freezer, allow to thaw and they marinate while they thaw -- brilliant!
