1 pound extra lean ground turkey breast (99% fat free)
1 pound lean ground turkey (7% fat)
1 tsp. black pepper
2 tsp. sage
2 tsp. thyme
1 ½ tsp. rosemary
1 tsp. onion powder
3/4 tsp. red pepper flakes
¼ tsp. cayenne pepper
½ tsp. salt
1/2 cup apple sauce
Mix all ingredients together very thoroughly. Use your hands if necessary. Divide the sausage in 4 equal quadrants in the bowl. From each quadrant make 4 2-inch patties. Spray a nonstick skillet with coking spray. Place skillet over medium heat and cook until done (no longer pink inside).
To freeze: Wrap each in freezer paper and then place individual patties into zip-top bags to store in the freezer. This makes for easy individual servings of sausage.
