Balsamic Tomato-Cucumber Salad

2 Tbs. Balsamic Vinegar
1 cucumber (peeled in strips)
3 medium tomatoes
¼ cup reduced fat Feta cheese
2 Tbs. fresh chopped basil
2 tsp. extra virgin olive oil

Core and seed the tomatoes. Next coarsely chop tomatoes and cucumbers into bite size pieces. Toss in a bowl. Drizzle with balsamic vinegar, and sprinkle with cheese. Chill for 30 minutes, toss with olive oil and basil just before serving. This salad is best served the day it is made.

Yield: 4, 1 cup servings
