Potatoes are a nice vegetable alternative to noodles in this flavorful and quick side item.
8 small unpeeled red potatoes, quartered (about 1 pound)
2 cups broccoli, chopped into bite size pieces
½ cup light Alfredo sauce (Buitoni® suggested)
1 Tbsp grated Parmesan cheese
Fresh ground pepper to taste
Place potatoes into a microwavable safe bowl and add 2 tablespoons of water. Cover the bowl with plastic wrap, poking a few holes in the top to allow steam to escape. Microwave on high for 3-4 minutes, until potatoes are almost fork tender.
Add broccoli to the bowl and stir to combine. Cover the bowl with the same plastic wrap and microwave again for 2 minutes.
Drain any remaining water from the bowl. Add the Alfredo sauce and stir.
To serve, spoon onto four plates and sprinkle each serving with a little grated cheese and fresh ground pepper.
